Three-ingredient Maple Syrup And Bourbon Soufflé

I can’t quite remember where I first got the inspiration for this (it’s all over the internet) but I think the genius inventor is a lady called Katy Atlas who has a blog called Sugarlaws. She conceived of a near miraculous two ingredient soufflé of eggs and maple syrup. In my version I replace half the maple syrup with bourbon. You  need to be very quick getting it to the eater as it deflates with celerity.

a matter of minutes…

for two

  • one egg
  • 2 tbsp maple syrup (a nice dark type)
  • 1 tbsp bourbon Jim Beam is fine
  1. separate eggs
  2. whip whites until stiff
  3. mix together the egg yolk, the syrup and the bourbon, use the same whisk
  4. fold the egg yolk mixture into the egg whites
  5. pour into two ramekins
  6. put on the bottom of the top aga for about eight minutes
