Three-ingredient Maple Syrup And Bourbon Soufflé

I can’t quite remember where I first got the inspiration for this (it’s all over the internet) but I think the genius inventor is a lady called Katy Atlas who has a blog called Sugarlaws. She conceived of a near miraculous two ingredient soufflé of eggs and maple syrup. In my version I replace half the maple syrup with bourbon. You need to be very quick getting it to the eater as it deflates with celerity.

for two
- one egg
- 2 tbsp maple syrup (a nice dark type)
- 1 tbsp bourbon Jim Beam is fine
- separate eggs
- whip whites until stiff
- mix together the egg yolk, the syrup and the bourbon, use the same whisk
- fold the egg yolk mixture into the egg whites
- pour into two ramekins
- put on the bottom of the top aga for about eight minutes
